Default over heating issue, =/

My car has like an seizure if you give it gas at low rpms, and now its over heating. coolant boiled over , this has happened to me one time before, i took it to siextreme and left it over night, the next morning the low rpm problem and the over heating problem was magicly gone. now it has come back a good 3 months later, anyone have any idea? i meen in 5th gear at 40.. if i put the gas pedal farther then half way tot he floor, it bucks like a mofo. anyways, any idea's would help im pretty baffled

probably just a leaky head gasket if the coolant boils over. that'd be the first thing to check...what engine??
