Seriously though.. something is always going to break with my car, it's getting bad enough gas mileage already, can't really haul anything (bike) with it, and I'm losing interest overall in going fast in a car. If I keep it, I'm probably going back to pretty much stock. I may not even trade it in, but I'm definitely considering getting a truck. Car will be paid off in June now I think.

Look into the double cab tacos or the tundra. The beds should be long enough.. if not you can always keep the tail gate down and get the cage to estend the bed to the end of the tailgate.
I would get a Forester STI, when they release it, and a trailor... 
SUV wise, one thing I would like have (or like to see), is a modded Mitsu Montero.. All the reviews claim they are a decent 4x4 stock.. and they look badass, kinda like a modern safari vehicle or somethin..

With gas $3 bucks a gallon, I'm sure you can find all kinds of lifted trucks for sale really cheap.
IIRC, I got about 39 MPG when I had my 1000RR. That was nice!
