Single stage paint is 1 layer of paint that dries glossy. Clear coat isn't mixed in, it's just the way the paint is. It's more prone to breakdown due to weather and generally doesn't look that great after a while (unless you buff/wax it all the time). Two stage has a base coat of color laid down that usually dries flat and then clear coat is sprayed over to make it glossy. Two stage is the best way to go for better looks and longetivity, it's more expensive though. 3 stage is just an added layer of pearl or flake coat on top of the color coat.
