If the timing is off, it may make a difference, too. I'm not completely sure that would be it seeing as you say it's mostly falling on its face when you first give it gas. Although it mostly sounds like a a/f mixture issue, it probably wouldn't hurt to look into it. I had to play with timing a lot on my old 302 modded similar to your 350, but with an edelbrock 4 barrel. Finally got a light gun and it made a huge difference.

There is the sensor and a sensor controller, and the sensor controller will have a display. You can also get a round (standard sized) gauge with the controller built in. Very, very useful thing to have when doing carb tuning. I'll stick to my fuel injected engines though, because carbs aren't my thing.
