What about torque? Maybe the 1.8T motor is just finicky but it's hit or miss with VW I guess....

No, it doesn't. Raising boost adds horsepower. A bigger intercooler doesn't. Yes, a FMIC cools better, but the stock IC cools as well at stock boost levels.
