Far as I knew it was to help them to not over heat too quickly. Not as much friction but the same stopping power.

Start with a truely good set of pads. Carbotech sell a variety and even some custom stuff. Trust me if you do some good pads and have properly functioning brakes they will be more then enough for street usage. As far as the drilled rotors. Avoid them. If you have stock sized brakes and they are not drilled from the factory then stick with blank rotors. Blanks are better because they weight more and as a result absorb more heat before reaching a critically high temp. Now I know that Porsche uses drilled rotors BUT they design the rotor very large to get better leverage for stoping and as a result the brakes have plenty of mass already. As a result they can actually benifit partially from the reduced mass off the drilling (lighter rotating mass and sprung weight). Still its a risk because they can crack easier. I am sure marketing plays a role in this choice. Those holes do look cool behind that big red caliper.
