How stretched would a 295 tire be on a 11.5" wheel?

As said above,since you're re-using the current tire,just imagine the bead on each side being .25" further out.
You could also look up the tread width(not section width)of the particular tire you have,and compare that to wheel width.I always like to do this when switching brands of tires,since there's a lot of variance model to model in the same size tire.
I don't see it being too big of a deal since you know what you currently have,and you're just going .5" wider on the wheel.Since you have the hook-up on mounting just get them to let you look at the first one they mount,before they balance it,then make a decision...Hell,you've spent big money on those wheels,dropping a little more for a couple tires isn't that big of a deal
