VIR wants me to buy a $750 roll bar for the privilege of driving there. Insurance costs are the same, but VMP is close enough that I wouldn't even need a hotel room. While VIR is out of my price range, VMP is tantalizingly within reach!

You don't need a hotel at VIR, camping is allowed.
Even if they didn't require you to have a roll bar, there's no way in hell I would go on track without one in a open top car. I've seen a hand full of roll overs, even in HPDE.

You're probably going to need a rollbar at any road course if you've got a convertible.
