damn a Sc61 is a big bitch..as far as maintenence,i would check/change your plugs often, and make sure the heat range on them is appropriate for your setup/motor. Make sure your oil lines have no kinks in them, and are not frayed. Also make sure you dont put low octane,or "watered down" fuel in the car.

JWT tunes are notorious for running conservatively and running a little rich and 'sometimes' fowling plugs. i would run NGK BKR7__ or BKR8E__ heat range depending on boost.

what cooling set-up are you running?

change oil every 3000 religously or more often if it smells like fuel. 10-40 fully synthetic. check oil often, i R&R more sr's that run low on oil and spin bearings than anything else. (well, besides fixing wiring problems, but it sounds like yours runs well).

if it where my car, i would put it on a dyno just to make sure the engine is running good AFR's.

down the road, you would get more out of that turbo if you upgraded the cams and intake manifold.
