Check that something isn't loose on the shift linkage, or that the various shift bushings aren't destroyed. None of the other gears have problems?

Ding Ding Ding WRONG!
Synchronizer rings/guides have nothing to do related to transmissions staying in a gear. Synchronizers only guide the gears as the engagement [hub] approaches the gear. Synchros do not hold the gear into place when the correct gear is engaged.
Make sure you engine and transmission mounts and linkages are not sloppy. If your transmission is moving relative to the engine or fixed link, it will pop out. I would guess its only about a 25% chance of this...other than that its internal to a worn gear or shift fork. Small chances its in the actual shifter interface, but that is pretty much related to the linkage.

Re: tranny popping out in 5th
Actually...if the 5th gear shift fork is worn, then the ring gear will not fully engage the the 5th gear syncro as to cause the dreaded "popping out of gear" syndrome.
Now if the problem was grinding of several/all gears or popping out of several gears then the problem would be related to the items that all gears would share...ie, linkage, or shifting interlock.
The 5th gear shift fork wear is common in poorly maintained Honda MT
