in that case you may want to invest in some kevlar blankets and dumbbells to hold them sturdy. , but there should be enough crates for an 8x10 room granted you have a dresser or two and a tv to stuff the blankets under

how tall could this 8x10 fort be?

Roughly 5 to 6 ft if used as center supports, and 3 to 4 ft if used as perimeter supports.

12 is not enough to build a fort, thats like a 4 foot long wall thats 3 feet high.
