My STi never had a stock stereo in it. The standard WRX sound system is what came in the '05+ cars. It's ok, but is nothing to be too proud of.

The value on the STi/EVO is all dependent on how many are for sale, location and condition. I've seen low mileage ones fetch near new prices. I've seen some sell for way less. I got a steal on mine because the owner needed to sell it.

And I'd still be leary of the Evo reliability.

out of all the cars you chose an sti? i would get a ws6 6 speed with low miles. you can find one for around 10 grand. sc Cobra, camaro ss, dont get a vette, every one has one now, they are becoming like mustangs. OR you what i would do if i had 26K i would build a sleeper.
