Put a fuel pressure gauge on it and let it sit for a while and see if it bleeds down. I believe it should be right around 45 psi while running and when you shut it off it shouldn't bleed the pressure...

I've done lots of LS cam swaps...the book says to pull heads and lifters and such as JacKal posted.. that is the safest way, but I've done plenty by just pulling the valve covers, push rods, timing...

Is the AC compressor and stuff still even hooked up? Sounds like you took a bunch of parts off it, there might not be any AC in it. But if you want to evacuate it, just use rubber gloves and a valve...

That's another possibility. If you suspect that, pull the precat oxygen sensor and see if it'll start.

Do you have good compression? Also I would check for fuel injector pulse. I believe there's a big 20 pin or so connector located by the alternator that has all the fuel injector wiring so you won't...

Sounds like you have a won't crank issue and a cranks won't start issue at the same time.

You need to get it to crank first without jumper cables. What terminals are you hooking the jumper cables...
