Default need the xperts help again

okay experts i need some advice again. heres a brief history. a few months ago i had that stutter problem at high rpms which i posted about every one said if it went away to just forget about it it was probably just a hiccup or bad gas. well that went away. now its back and worse. i thought i had it fixed last week with a new filter but its still there. basically when you ride teh streets its fine for everday cruisin. as soon as you give it some rpms (like 8000 +) its start to sputter and bog down and eventually dies out completely. just shuts off. everything electrical is still on though. it just stops like its out of gas or somethin. then it cant be started right away. if you give it choke (its carborated) then it will start after like 10-30 seconds of hittin the starter on and off. without choke it can take a minute or more. then it will start up and run fine till you get to those high rpms again. heres what i already did and checked
-did the fuel pump flow test (plenty of fuel maybe even too much it says it should get 27 oz per minute minimum i was gettin like 96 per minute or 8 oz for 5 sec which equals 96 per minute.
-checked all the fuel lines and air hoses for obstructions - they were all good
-checked fuel filter - blew through it lightly and it had no obstruction gas flew out
-changed air filter
-inspected the fuel tank vents and petcock - all good
i guess thats bout it i did everything but mess with the carbs cause i dont wanna mess it up. ANYONE HAVE ANY IDEAS im at a complete loss, and i dont wanna pay any of the shop crooks in this area so any input would be greatly appreciated, before i have to send her off to the shops. thanks in advance for any advice

I think you might be too rich with all that pressure.

if the fuel flow is nearly 4 times the manual's recommendation then could definetly be too much fuel... but, the choke richens the mixture so if it would run better with that on that wouldn't really make sense, i'd check your spark plugs and see what they look like, they can tell you if its too lean or too rich, and i'd put some new ones in
