When modding your car do you keep your stock parts?
Whith my Z06 I kept nothing... sold everything I could to get money back. I have been able to find most of what I needed to put it back to stock (interior and suspension wise) but it's getting a little harder and some parts aren't made by GM anymore. I have a feeling that over the next few years some stuff will be very hard (read expensive) to get etc.
As a result I've boxed, and labeled every stock part that's come off my red car. Keeping it all for if I ever want to put it back to stock and sell the mods etc.
So sell or save?

I keep mine. Most of my stuff wouldn't be worth too much anyway. I had like 70k on my TBE and most of the bolts are seized like a mofo, IMO it wouldn't be worth the hassle of selling it. My wheels I could sell for a decent ammount, but they are worth far more to me than what I could sell them for (not to mention I'd like to have 2 more sets of wheels, lol).

Keep them, unless you won't ever need them again and you can gain back a significant amount of money by selling them. Worst case, you can put the car back to stock later and sell any aftermarket parts that were on it, which usually equals more money when you go to sell it.
Like said above, most stock parts aren't worth much, except wheels, and wheels are one thing you should keep in case you need spares. I sold my stock wheels and then bought the exact same type about a year later so I could put winter tires on them. Then (coincidentally) I broke one of my summer wheels, so I had a backup set of wheels/tires to throw on.
I've stopped getting rid of stock parts; their usefulness is usually greater than the small amount of money you get from selling them.

I don't have my stock seats... but I have everything else.

It depends on what it is. But I only have my stock radio unit for my car left over from the little things I have changed. Trying to buy OEM pieces is a bitch on toyotanation too, faggots don't answer their FS threads or just ignore you and bump it every other day.
