Like spinnydrift said, it's a huge pain in the ass to do, and a huge pain in the ass to maintain. It's not that it's unrealistic, it's just that you're going to be sinking a lot of time and money into this project.
But... if you're actually serious:
You don't need an R31 tranny, per se. Any RB25DET transmission will work fine.

They've been doing RB swaps into 240s for awhile, and sell all the random crap you'll need to make it work (adapters, crossmembers, downpipes, etc.).

I believe the RB26DETT was from the most recent R34 skyline, not the R32, so the motor may be more difficult to get ahold of than you think. I have heard that the swap is a pain in the ass, as others have told you. Also, the block is cast iron, unlike the Sr20, so you're going to front out your weight distribution if you're interested.
