Just an FYI, the 3rd gen Camaros with the 5.7L didn't come stock with a manual transmission. I'd probably say the cheapest/easiest to work on out of the bunch would be the Mustang, parts are cheap and easy to find on top of there being a huge selection of aftermarket options.

if it's gonna be a track whore, can't beat a miata or fox body mustang for the bag for the buck ratio and keep it under $10k.
parts are expensive for bmw, but if you wanted to go all out with a budget over $10k, it might be more fun overall.

Another vote for miata. When you can find engine/tranny combos for them for like $600, you really can't beat it. Just slap a turbo or supercharger on it and you're good to go. Either that or swap an LS or 350 SBC into the bimmer or S13. Mustang is pretty inexpensive to run and modify as well, the miata more so. Other than that I wouldn't even consider the rest. Well, a 2.5 RS would be cool actually but not cost effective so eff it. Oh, and Brock is gay.

Sorry mistype and didn't even notice it was an 86'
And to the best of my knowledge it was stock.
I've definitely seen more than a handful of 3rd Gen stand shift transmissions.

I said none of the 5.7Ls came with a manual transmission, which is completely accurate. Chevrolet didn't think the T5 could handle the torque of the 5.7L, so they didn't end up in them. Plenty of 305s / V6s had them, in the end we're getting off topic :P
